Lao Ngaw is an ethnic community with the cultural life of their specific identity. However, it has been changed since the era of cultural and intellectual world. They are losing their concrete knowledge or wisdom that is hidden by the traditional lifestyle of the ethnic Lao Ngaw. Therefore, the study of Traditional Lao Ngaw Food to create economic, social and cultural development of the community's values and are proud of their ancestors have built mountain development. As a result, communities have been added in the form of revenue from the sale of food products, local business community in Laos Ngaw. This research used qualitative methodology starting from the initial data collection of papers exploring the social and cultural context of communities in central Lao Ngaw. The history of Lao Ngaw, wisdom, knowledge development and quality of food in Lao Ngaw were carried out in this study. The study areas are communities of three ethnic groups living in Laos Ngaw in the central province of Thailand (Saraburi, Lopburi and Singh Buri province). The total population consists of about 169 people (Key Informant) of 49 practitioners (Casual Informant) 96 people and general people (General Informant) of 24 people. The results found that a group of speakers of Lao Lao Ngaw, which they themselves called "Lao Ngaw that" the language spoken by the Lao people in this group. The research has appeared Ngaw Laos has not its own written language, only having spoken language. This dialect spoken is similar to spoken language in Lao Luang Prabang, Laos PDR. The original settlers of the Lao Ngaw, immigrants live in the central region of several hundred years. The present condition and problems of the knowledge economy of the community Ngaw Lao food are 6 aspects: how to obtain food, there are 5 ways to keep the hunting of wild plant and animal exchanges. The wisdom and quality of food in Laos Ngaw are six areas to obtain food such as food preparation, food consumption trading or sharing of preservation and packaging division. The extra one is to preserve the cultural, intellectual in the tradition and rituals. The raw materials used in the preparation of a project in Laos Ngaw local vegetables and local food.
